We shared many cooking and eating adventures together over the few years we were neighbours near the beach. Even though she was bringing her children up in Australia, they were enveloped in the Thai traditions and loved their food too.
One of my favourite things was her yummy apple crumble. I'm not sure this was a traditional dish but one that was adapted for all the foreign backpackers.
We will eat this at Moondew tomorrow. Yummy.
Here is the recipe:
Preheat oven to 160 degrees (fan forced) or 180 degrees normal.
- Peel and dice 1 kg of red or green apples (or buy a tin of cooking apples if you dont have time)
- Lay the apples in the bottom of a pie dish
- In a separate bowl, mix 300 grams of butter, 1 cup of brown sugar, 3 cups of traditional oats, 2 teaspoons of nutmeg, 2 teaspoons of cinnamon. You can add one half cup of shredded coconut if you like. Mix thoroughly.
- Sprinkle the crumble mix over the apples.
- Put in oven for 40 minutes or until lightly brown.
It is so good there won't be any leftovers!!!! Enjoy!
